Baking Easter Cupcakes!!


So, it is very nearly Easter! That also means that THERE’S ONLY ONE WEEK LEFT OF SCHOOL!!! I cannot explain to you just how excited I am to not have work for 2 whole weeks! I’m over the moon!! Now, I have never been one for cooking/baking, even though I do really, really enjoy it… So, what I thought I would do is make some little chocolate cupcakes and share it with you (in celebration of making it another term at school, and having an excuse it eat something naughty! Haha!!)

So, firstly, the things that you will need for the cupcakes are:

  • 150g Butter (unsalted),
  • 150g Unrefined golden caster sugar,
  • Eggs (free range) medium,
  • 125g Self-raising white flour,
  • 25g Cocoa powder,
  • ½tsp Baking powder.

Then, for the decoration, you will need:

  • 100g Butter (unsalted),
  • 100g Icing sugar,
  • 25g Cocoa powder (if you want chocolate butter icing),
  • Some mini chocolate eggs for the top.

So, screen munch that bad boy of a list and head down to the shops! :)

Okies, now that you have all of the ingredients that you need, you can start your baking. You will need to pre-heat your oven at 180 degrees celsius (Gas mark 4) and leave it to heat. Oh, you could prep your cupcake cases in a little tray now too! (If you want to be super organised! Haha!)

Get your butter and your sugar and mix it up using a wooden spoon, or an electric hand mixer, if you’re feeling flash! Then, gradually beat in your eggs (adding some flour if your mixture curdles). Finally, add your flour, cocoa and baking powder to the mixture – Give it a good stir!


Place a tablespoon of the mixture into each cupcake and bake in the oven for 20 – 25 minutes – Baking tip: when you take them out, stick a metal skewer or tip of a knife into the cupcake. If it comes out clean you’re all good to go and your cupcakes are perfect! If not, pop them back into the oven for a couple of minutes. :)



To finish off, mix up all of the decoration ingredients: butter, cocoa powder, icing sugar – Warning, this will hurt your arms. Finally, place two or three small mini eggs on the top! You can see that I tried out putting cocoa powder on one of mine, but I thought they looked better with plain butter icing.

… And there you are! All done! I hope you all have time to make these because they are gorgeous and so, so tasty! They are also nice to take into work, or share with friends or whatever. I had fun baking for you all and it’s nice to do something different  and just have time to relax a little bit… Work boycott weekend is definitely a winner! :)
